Canning Tomatoes/Salsa

David and I decided we would try our hand at home-canned salsa. Since Mexican you know is our favorite food!!! First you start out with clean jars, and since I do not like washing dishes you give your hubby that chore!
You start with fresh picked tomatoes, and peppers.
To that you add some onion, jalapenos, sugar and salt.....

Chop up all your ingredients and put in a large pot which you let simmer at a low boil for about 5 minutes.
Ladle into hot, clean jars and cook in a waterbath canner for about 5 minutes.

We tasted some of this and it was pretty hot. Our recipe called for 3 cups chopped jalapenos. I added only 4 individual jalapenos and it was pretty hot. We might have to use this for soup instead. Oh well, it will probably be pretty good this winter.

Oh that looks so good! Won't that be fun to have this winter?!

I made some one year and used the best tomatoes like yours...the recipe called for serrano peppers. We were so sad when we realized I'd used more than we could handle...blow your head off hot!

I stay away from serrano's now..jalapenos we can handle! ;-)
